Peach Honey Butter Recipe

Bryan is the king of buying fruit, putting it in the fridge and forgetting about it. When I found several peaches in the bottom of the fridge, with soft spots, I decided to make jam. I found a recipe for apple butter and decided, “Hey,  I could do the same thing with peaches!” The best part of this recipe is it has no sugar, only five ingredients and is sweetened with honey.  Yes, I am still on my honey recipe kick. I didn’t realize I could use it in so many dishes.  Plus, the Peach Honey butter is good for people on special diets. I made sure it was gluten free, dairy free and had none of the top eight allergens.

Here’s what you need:

I made a small batch, but the recipe could easily be expanded.  The peach honey butter freezes well and could be canned.  Peel and slice the peaches. Cover them with low sugar pectin and the juice of your choice. (I used Ball brand that I found in the canning section.)  Allow the peaches to sit ten minutes.

Place the peach mixture into a large saucepan and stir in the honey. Bring to a boil, stirring constantly, and then reduce heat to low. Allow to cook, stirring occasionally, until mixture is thickened. This should take about 30 minutes.

Ingredients
  • 6 peaches, peeled and sliced (Remove pits)
  • 1/2 cup honey
  • 1 package low sugar pectin
  • 1 cup juice of your choice (I used apple raspberry)
Instructions
  1. Mix the peaches, pectin and juice together. Allow to sit for 10 minutes. Add honey. Place the peach mixture into a saucepan and bring to a boil. Reduce heat to low, allow to cook for 20 to 30 minutes, until thickened. Can or freeze.

Allow the peach honey butter to cool. Pour into jars and can or pour into freezer containers and freeze.
