Have I mentioned how difficult it is to cook for a family when they have different health challenges? Between Brittany’s celiac disease and my in-law’s diabetes, finding a recipe that tastes good can be complicated. When a recent urge for Banana Bread struck, I adapted our recipe to create a Peanut Butter Chocolate Chip Banana Bread. It’s gluten free, has less calories and still tastes yummy. Score!
How to Make Peanut Butter Chocolate Chip Banana Bread:
The recipe sounds complicated, but it’s not. Before you begin, gather the supplies you need, mash the bananas, and mix the flour, salt, baking soda and baking powder. Now the recipe will come together quickly! Note: If you’re not gluten free, use 2 1/2 cups all purpose flour.
The first step to a good bread is mixing the butter and sugar with a mixer until it’s light and creamy. I substituted SweetLeaf SugarLeaf sweetener, a mixture of stevia and cane sugar. It works the same as sugar in baking, but has 2/3 less calories. (I used the conversion method of 1/3 cup of SugarLeaf = 1 cup sugar and 3 Tablespoons SugarLeaf® sweetener = 1/2 cup.)
To the butter mixture, add the eggs, one at a time, mixing after each addition. Mix in the vanilla extract, then mix in sour cream, peanut butter, buttermilk and bananas. This amount of peanut butter gives the bread a subtle peanut butter taste. When I make this again, I plan to add more peanut butter for a bigger peanut butter punch, so adjust the peanut butter to your taste.
Add in the flour mixture, 1/2 cup at a time, mixing after each addition. Pour the batter into a greased bundt pan (or use bread pans) and bake for 30-35 minutes at 350 degrees. Because baking times can vary, insert a knife into the center. If it comes out clean, the bread is done.

- 1/2 cup butter, softened
- 1/2 cups SweetLeaf SugarLeaf sweetener
- 2 eggs
- 1 tablespoon vanilla extract
- 4 large very ripe bananas, mashed
- 1/3 cup sour cream
- 1/2 cup peanut butter
- 1/3 cup buttermilk
- 2 1/2 cups gluten free flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 1/2 cups milk chocolate chips
- Mix flour, salt, baking soda and baking powder together in a medium bowl. Set aside.
- Mix butter and SweetLeaf together until creamy. Add eggs, one at a time, beating well after each addition. Add vanilla extract. Beat until blended. Mix in sour cream, buttermilk and peanut butter. Stir until blended. Add bananas. Stir until blended. Add flour mixture, 1/2 cup at a time. Mix after each addition. Fold in chocolate chips.
- Pour mixture into a greased bundt pan and bake at 350 for 30 to 35 minutes or until a knife inserted into the center comes out clean. Remove from oven and allow to cool in pan for 20 minutes. Remove from pan,

We use Bob’s Red Mill or Krusteaz Gluten Free Flour. Both seem to work well in recipes.
