It’s that time of year. The time when I’m baking furiously to keep up with all the holiday events we attend. One of my favorites is the annual Christmas cookie swap at our church. All of the ladies get together, bringing several dozen cookies and a potluck dish. After dinner, we have a “cookie tasting.” Everyone is given a cookie tin and allowed to collect a certain number of cookies from each participant. It’s a great way to have a variety of cookies on hand with a lot less work. This season I wanted to try something different. Peanut Butter Chocolate Chip Pretzel Cookies Recipe

You can experiment with these cookies if you like by using different types of chocolate chips. This recipe works well with dark chocolate chips, semi-sweet, or milk chocolate. If you prefer you can add white chocolate chips or, for an extreme peanut butter taste, peanut butter chips. If you need the recipe to be gluten-free, substitute gluten-free baking flour for the regular baking flour and use gluten-free pretzels.

One tip for new bakers is that the type of cookie sheet you use can make a difference. I like to use a shiny air bake cookie sheet. This helps distribute heat evenly and keeps the bottoms of the cookies from burning. These cookie sheets are low cost too. You can find them for around $7.00- $10.00. It’s a great investment piece for your kitchen. Be sure to follow the required refrigeration time too. If not, your cookies will spread. No one wants that.

Peanut Butter Chocolate Chip Pretzel Cookies Recipe
Ingredients
  • 1 cup unsalted butter
  • 1 1/2 cups peanut butter (can use smooth or crunchy)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon vanilla
  • 1 cup chocolate chips (your choice: dark, semi-sweet, or milk chocolate
  • 3/4 cup crushed pretzels
Instructions
  1. In a medium bowl, cream butter, peanut butter, brown sugar, and granulated sugar together.
  2. Beat in eggs until mixture is smooth.
  3. In another medium bowl, sift together flour, baking powder, baking soda, and salt,
  4. Slowly add the flour mixture into the butter mixture.
  5. Place the dough in the refrigerator for 1 to 2 hours. .
  6. Preheat the oven to 375 degrees F.
  7. When the dough has finished chilling, roll small amounts of dough into 1 inch balls and place on baking sheets.
  8. With a fork, flatten each ball, making a crisscross pattern.
  9. Bake for about 10 minutes or until the cookies begin to brown.
