It finally happened. I outgrew my “when I gain weight” pants. I’d been stress eating-and reaching for every thing sweet I could find- but still exercising with a brisk two mile walk several times a week. Then, boom, I hurt my foot and got placed in a foot boot. Between my slow, painful downtrodden limp, and my boot, exercise was cut out. “You’re supposed to be resting your foot,” the doctor advised. I told Bryan, “We are going on a diet!” and he, having gained some weight himself, reluctantly agreed. The one thing I knew I would have trouble with was sweets, those delectable, comforting treats. Once I thought I couldn’t have them, the urge to eat them became paramount in my mind. Then I remembered my “stuff” recipe, for low calorie mousse. With just four ingredients I can whip up a gluten free, sugar free parfait. This can be adapted with regular ingredients if you are not on a diet, but honestly, I can’t tell the difference in taste.
Here’s all you need to make it:
The best part of this recipe is how versatile it is. Don’t like chocolate and peanut butter? Make it with a different flavor of pudding. You can also substitute different flavors of gelatin to make this into whatever flavor you want. It doesn’t have to be made into parfaits either. If you place the mixture into a pie crust, you’ve got mousse pie!To make the parfaits, mix the milk and pudding together as usual. Add in 1/2 of the container of whipped topping. Mix the peanut butter with the other half of the whipped topping. Chill until firm. This usually takes about 10 minutes. Add a heaping tablespoon of the peanut butter mixture to the bottom of a parfait glass and then top with a heaping tablespoon of the chocolate mixture. I added a cherry on top to make it decadent.
- 2 cups skim milk
- 1 (3 ounce package) sugar free chocolate pudding mix
- 1 (8 ounce container) sugar free whipped topping
- 3/4 cup (6 ounces) all natural peanut butter (use a sugar free version if it is available)
- Combine the milk and pudding mix. Stir until blended. Add 1/2 cup of the whipped topping. Combine the peanut butter with the remaining whipped topping. Chill until firm. Add a heaping tablespoon of the peanut butter mixture to the bottom of a parfait glass. Top with a heaping tablespoon of the chocolate mixture. Chill until serving.
