Do you ever have an idea for a cookie and then something goes tragically wrong? I mean, a total cooking flop! I had planned to make cute white chocolate covered peppermint cookie bars for my son. He had been asked to bring “two dozen of his favorite homemade sugar cookies; with whatever add-ins he wanted. I didn’t have time to do homemade so I had purchased a package of new Nestle Rolled and Ready dough, who is sponsoring today’s recipe, with the intentions of adding to it. Unfortunately, I forgot to grease the pan and my cookies stuck. I didn’t want to waste the cookies I had so I decided….why not mix them with other ingredients and make them into a festive Christmas cookie? I also gave some to test tasters who didn’t know I had messed up. They told me the cookies were good. Score!
Here’s what you need to make them:
Begin by placing a layer of cookie dough onto a baking sheet. You can slice it if you like. (My advice: be sure the pan is greased first.) While the cookies are baking, place the peppermint into a food processor and process until in small pieces. When the cookies are done, remove from the oven and allow to cool. Break the cookies into pieces and place in the food processor until they are in small crumbs.
Melt the chocolate chips with the cream. Mix together cookie crumbs, peppermint and chocolate. Roll the mixture into balls and place on waxed paper. Place in freezer until firm, about 15 minutes.
Melt the white chocolate and roll the cookie balls in the white chocolate mixture, making sure to coat all sides. Sprinkle the top of each cookie with peppermint pieces.
Return the cookies to the freezer for 15 minutes for the white chocolate to harden.
- 1 16 ounce package Nestle Toll House Rolled and Ready Sugar cookie dough, baked
- 1 package (12 ounces) milk chocolate chips
- 1 package (12 ounces) white chocolate chips
- 6 tablespoons cream
- 25 peppermint candies, crushed
- Crumble sugar cookies and place in food processor. Pulse until finely chopped. Melt milk chocolate chips with 3 tablespoons cream in a microwave safe bowl, stirring every 35 seconds, until melted. Mix 3/4 of the crushed peppermint candies, milk chocolate and cookie dough together until blended. Roll into balls. Freeze 10 to 15 minutes or until firm. Melt white chocolate chips with 3 tablespoons cream. Dip the chocolate cookie balls into the white chocolate until covered. Sprinkle with reserved peppermint crumbles. Place in freezer 15 to 30 minutes to harden.

Your second to last step says to roll in WHITE chocolate! Why does your show them looking like they’ve been smothered in DARK chocolate?
The picture shows the balls as they are formed. After the cookies are rolled into balls, then they are dipped into the white chocolate. The picture at the top shows them after they are dipped into white chocolate.

I can see why peppermint snowball cookies were a hit at your house! They sound delicious. Excellent recipe and good work on turning lemons into lemonade ..oops, sugar cookies into peppermint snowballs.
Now that is very creative and taking a not so good situation and making it into a success. I love when people can do that in their kitchens. I need to get some of this already rolled dough. I think it will make this time of year a little bit easier.
