This recipe proves Southerners can make a casserole out of anything. I first tasted this when Bryan’s great aunt brought the dish to a family reunion. She graciously shared her pineapple casserole recipe and I have been preparing it for our Thanksgiving and Christmas Eve dinner ever since. The sweet combination of pineapple goes well with ham or turkey.
This year, because of my daughter’s celiac diagnosis, I prepared it with corn starch instead of flour to make it gluten free. It worked. The dish was not as firm as usual, but there was no difference in taste. As always, this recipe is simple to prepare, which places it high on my list of favorites. I have included the basic recipe and added gluten free adaptations so everyone can enjoy it! This can easily be doubled to serve the entire extended family. Plus, they will exclaim how good it is without knowing you didn’t try very hard to make it; always a win-win in my book. If you are not gluten free, use flour and top it with a rich, buttery cracker mixture for a delicious taste combo.
- 1 (15 ounce) can crushed pineapple, drained
- 1 cup (8 ounces) shredded cheddar cheese
- 1/2 cup (4 ounces) flour OR substitute 3 tablespoons corn starch to make gluten free
- 1/2 cup (4 ounces) sugar
- 1/2 cup (4 ounces) butter
- 20 ritz type crackers, crushed (omit or use gluten free crackers to make gluten free)
- Mix pineapples, flour (OR cornstarch), and sugar together in a 8″ by 8″ casserole dish. Stir in shredded cheese. Melt the butter and mix cracker crumbs into the butter until blended. (Omit this step or use gluten free crackers to make gluten free.) Sprinkle the cracker mixture over the top of the casserole. Bake at 350 for 20 to 25 minutes.

A few years ago my boyfriend’s sister invited us to lunch. On the menu was a pineapple stuffing, crushed pineapples over white bread which caused me to giggle. A lot. She still teases me to this day about my reaction to her food.

The pineapple and cheese combo is interesting to me. I also can’t do warm pineapple. My family hates that I can’t cause that means no Hawaiian pizza! I may have to make this for them though. I’m sure my husband would love it.
