Pink Lemonade Cupcakes with Lemonade Buttercream Frosting (Gluten free!)

Remember the six weeks I had to plan my daughter’s wedding? I was sure I could pull it off until I realized I had to make the desserts! I was quick to outsource the dinner to a local restaurant and pick up the food from them, but I needed desserts everyone could eat, including my celiac daughter. I whipped up a batch of tasty gluten free Cookies and Cream cupcakes and then froze them. Big mistake! When I took them out of the freezer a couple of days later, they were a mushy mess. They still tasted okay, if you could get through the weird texture. None of us could so I had to dispose of that batch and start over. This time I decided to try a new recipe. After finishing our recipe I sent a cupcake over to our neighbor and had him test taste them for critiquing purposes. He was happy to help me!

Pink Lemonade Cupcakes

Once again, I cheated and used a box mix since I was in a hurry. This recipe works well with a gluten free boxed cake mix since it has extra ingredients added in to give it some “oomph.”  Just use the gluten free vanilla cake mix and mix as directed.  My neighbor was impressed, as was our wedding guests. I never shared my recipe was from a mix!

A cupcake with just a touch of lemon.
Ingredients
  • 1 box white cake mix, prepared as directed on package.
  • 3/4 cup frozen pink lemonade concentrate, thawed to a liquid
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • Frosting:
  • Ingredients
  • 3 cups confectioners’ sugar
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 3 tablespoons pink lemonade concentrate
Instructions
  1. Mix cake batter as prepared on package. Add lemonade concentrate, sour cream and vanilla. Stir until blended. Pour into lined muffin tins, filling 3/4 full. Bake for 20 to 25 minutes at 350.
  2. To prepare frosting: Mix all ingredients together until desired thickness. Pipe onto cooled cupcakes.
