Sometimes the best recipes happen by accident. I had some pink lemonade concentrate leftover from my smoothie recipe and wanted to use it. After digging around in the fridge, I found some more ingredients that needed to be used and added them to the mix. The result was great! The kids liked it so much that they and Bryan drank an entire pitcher during dinner. Then, they asked me if I could make more. I explained how I had used all my ingredients making this pitcher so they went by the store and picked up more ingredients. I love it when I make something the kids enjoy and takes me very little time, effort or ingredients. When making this, be sure to add the lemon-lime soda slowly because it fizzes and will overflow the pitcher. I added one liter, stopped, stirred and let the fizz settle for a minute before I added the second liter. Also, I used reusable ice cubes in my lemonade to keep it from becoming watered down. This recipe is good enough to serve as a special drink for friends too!
- 1 (2 liter) bottle lemon-lime soda (diet is okay to use)
- 1 ( ounce) can pineapple tidbits in juice
- 1 () container frozen pink lemonade concentrate
- Mix lemonade concentrate and pineapple tidbits in a blender for 30 seconds. Be sure to use the juice too! Pour the lemonade/pineapple mixture into a pitcher and slowly add the lemon lime soda, stirring frequently. Serve immediately or store in the fridge until ready to use.
