Once we decided on a Princess Sofia party, we knew we needed the perfect cake. We wanted a cake that looked stylish and elegant. A cake that could be used for any occasion with a few changes. After deliberating on cake choices, we decided on a layer cake with a purple ombre buttercream frosting. Of course, it needed something to make it fit for a Princess. I added a tiara to the top of the cake to give it the perfect finishing touch. This cake would be beautiful for any type of princess birthday party. Just change the colors to match the princess. It would also be a great addition to any baby shower. Here is how to make a Princess Sofia Birthday Cake.
Princess Sofia Cake Instructions:
Because this was a special occasion, we made the cake from scratch. We substituted all purpose gluten free flour, but this recipe can be made with all-purpose flour if you don’t care if it is gluten free. We also made buttercream frosting for the topping. To make the ombre effect, the icing needs to be divided into 3 bowls with different amounts of food coloring added to create different colors.
The rosettes can be a pain to do so I found a simple tutorial for beginners on the Wilton site. This tells which tip to use, how to fill the bag and how to make a simple rose. If you don’t want to go to the hassle of making rosettes for the cake, ice the cake with the different colors of frosting the regular “smooth” way. Start at the bottom of the cake with the darkest color and work upward to the lightest.
I topped the cake with a tiara I found at Oriental Trading. I liked this tiara because it could sit on top of the cake without having to be pushed down into the cake.

- 1 cup shortening
- 1 1/2 cup sugar
- 3 eggs
- 1 1/2 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour (OR gluten-free all-purpose flour)
- 3 teaspoon baking powder
- 3/4 teaspoon salt
- 1 1/2 cup 2% milk
- Buttercream Frosting:
- 3 cups powdered sugar
- 1/3 cup butter or margarine, softened
- 1 ½ teaspoons vanilla
- 1 to 2 tablespoons milk
- food coloring, purple

- To make the cake:
- In a large bowl, mix shortening and sugar until blended. Add the eggs; blend, and stir in vanilla. Combine the flour, baking powder and salt. Add the flour mixture to the creamed mixture, alternating with milk. Beat on medium speed for two minutes. Pour into round cake pans. Bake at 350° for 30-35 minutes or until a knife or fork inserted near the center comes out clean. Allow to cool completely before frosting.
- To make frosting:
- In a medium bowl, mix the powdered sugar and until blended. Stir in the vanilla and 1 tablespoon milk. Gradually beat in remaining milk, a few drops at a time until the frosting is the desired consistency. If frosting is too thick, add a few more drops milk. Divide the frosting into three small bowls. Add a few drops of purple food coloring to the bowls to make different shades of purple. Begin with only a drop to make light purple, 2 to 3 drops to make a medium purple and 4-5 drops to make a darker purple. Adjust as needed to make the desired shade.
- Pipe on Rosettes or frost as desired. Place tiara on top of cake.
