Pumpkin Pecan

Nothing says fall like a plate of home baked goodies, the smell of their spicy goodness wafting through the house, waiting to be devoured. This season, as a Good Cook Kitchen Expert, I was challenged to make a sweet treat using pumpkin.  We have had all sorts of goodies with pumpkin this year; muffins, pumpkin cheesecake, pumpkin pie, and I wanted to try something different.  These pumpkin pecan cupcakes combine a yummy pumpkin cake recipe with a creamy orange frosting for a twist on a classic recipe. If you don’t like marshmallows or nuts leave them out. You can also substitute a different type of nuts if you prefer. Walnuts would be a good choice.

A yummy combination of pumpkins and pecans topped with a creamy orange frosting. These are perfect for Thanksgiving dinner.
Ingredients
  • 1 2/3 Cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 stick unsalted butter at room temperature
  • 1/2 Cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup canned pumpkin
  • 1 cup chopped pecans
  • 1/2 cup mini marshmallows
  • Fresh Orange Juice Frosting
  • 1/2 stick unsalted butter at room temperature
  • 2 cups powdered sugar
  • 2 tablespoons fresh orange juice
  • 1 tablespoon grated orange rind
Instructions
  1. Preheat oven to 350 degrees. Mix flour, baking powder, salt and pumpkin pie spice together in a large bowl. In another large bowl, cream sugar and butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla and pumpkin, beat until smooth. Add dry ingredients. Fold in pecans. Spoon batter into cupcake liners, filling 2/3 full/ Bake for 30 minutes or until knife inserted into cupcake comes out clean. Allow to cool completely before frosting.
  2. To make the frosting: cream butter and sugar until light and fluffy. Add orange juice and rind and continue beating. Add pinch of salt. Spread on cooled cupcakes. Can add a drop of orange food coloring if desired.
