There’s nothing like a wonderful Christmas dinner shared with friends and family. We have our list of traditional family dishes I only prepare once a year. The kids and Bryan hint throughout the year, “You know we could have this more often than on Christmas, right?” We could, but having it only at Christmas makes it special, building anticipation and memories. I’m always looking for new recipes to add to our repertoire, so when I discovered the Kraft Recipe Hub, packed with budget holiday recipes the whole family will love, I decided to try the Pumpkin Turtle Cheesecake. We had tasted a version of the cheesecake recently and it had been a hit. Thanks to our friends at Lunchbox, who are sponsoring today’s recipe, I am sharing the recipe. Hopefully, it will be a hit with your family as well.
Here’s what you need to make it:
Because my daughter has Celiac, I substituted a gluten free graham cracker crust. I made it the same as a traditional graham cracker crust, except substituted gluten free graham crackers. I patted into the bottom of a spring form pan and it was ready to go.
Pour the caramel topping onto the bottom of the pie crust and top with nuts.
Mix the pudding, milk, pumpkin, cinnamon and nutmeg in a large bowl. Fold in the whipped topping.
Store in the fridge and top with caramel, nuts and whipped topping before serving. The beauty of this pie is it takes only fifteen minutes prep time! It can be whipped up in advance and placed in the fridge until serving time. Have I mentioned how much I like plan ahead dishes? I hate to be stuck in the kitchen when my guests are enjoying themselves in other parts of the house!
- 1/4cup plus 2 Tbsp. caramel ice cream topping, divided
- 1ready-to-use graham cracker crumb crust (6 oz.)
- 1/2cup plus 2 Tbsp. chopped PLANTERS Pecans, divided
- 2pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
- 1cup cold milk
- 1cup canned pumpkin
- 1tsp. ground cinnamon
- 1/2tsp. ground nutmeg
- 1tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
- POUR 1/4 cup caramel topping onto bottom of pie crust; sprinkle with 1/2 cup nuts.
- BEAT next 5 ingredients in large bowl with whisk until blended. Stir in 1-1/2 cups COOL WHIP; spoon into crust.
- REFRIGERATE 1 hour. Top with remaining COOL WHIP, caramel topping and nuts just before serving.
