Red Curry Chicken Salad Lettuce Wraps Recipe

I am lucky my kids enjoy trying new cuisine. Or maybe they are lucky they enjoy trying new cuisine since I am constantly trying new recipes and foods from different countries. One family night idea I used on a weekly basis was trying  recipes from different cultures to create a meal.  This recipe that I discovered from the collection at Thai Kitchens, Red Curry Chicken Salad Lettuce Wraps, is a great way to use up leftover chicken and vegetables.  It’s a good addition for a quick lunch because they can be made in advance and stored in the fridge until we are ready to eat them.  They’re also perfect for summer because they don’t require me to heat up the kitchen.

This recipe is from the Thai Kitchen website and shows how easy it is to create Thai cuisine at home.
Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Thai Kitchen® Red Curry Paste
  • 1 tablespoon fresh lime juice
  • 2 cups shredded cooked chicken or turkey
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 6 large iceberg lettuce leaves
  • 1/4 cup dry roasted peanuts, coarsely chopped
  • Chopped fresh basil or cilantro (optional)
Instructions
  1. MIX mayonnaise, sour cream, curry paste and lime juice in large bowl until well blended. Add chicken, celery and onion; toss to coat well. Cover. Refrigerate at least 30 minutes or until ready to serve. Spoon chicken salad into center of each lettuce leaf. Sprinkle with peanuts and basil, if desired. Fold sides of lettuce over filling and roll up to serve.

    Let start by mentioning that I am a big fan Thai Kitchen products and use them all the time! Talk about an all around “kitchen helper!”

    That said – THIS is exactly the kind of recipe I am looking for as the weather (ahem) begins to warm up. Like you, (especially because we do NOT have central A/C – YIKES) I hate having to heat up the kitchen in order to make a meal!

    But even more important to us – is that my Honey/Hubby decided that he needed to lose about 60 pounds – and since the first of the year he HAS lost 48 so far!! Part of his “diet” is that he has largely cut out bread – and all EMPTY carbs for that matter. For us – it really works!

    It’s hard to replace the good old all American SANDWICH – BUT we have found making LETTUCE Wraps instead is a little messy but very delicious, light and refreshing. You feel great after eating a meal like this – and the pounds will peel off before you know it! Thank you!

    • I feel for you without central A/C. When I was growing up we didn’t have one either and my parents didn’t believe in running the air conditioner unless the temperature topped over 100. Too warm for me! 🙂
      We like lettuce wraps too. They really do help peel off the pounds. Woohoo! Congrats to your hubby. That is great he is doing so well with his weight loss.

  3. What would you recommend subbing for mayo because I can’t do mayo? Otherwise, it sounds good.

    • I think I would up the sour cream content–maybe 3/4 a cup and add 1/4 cup of plain yogurt. The taste won’t be quiet the same, but it’s a good substitute. I add plain yogurt when I don’t want the extra mayo calories.
