I have a “guilty” secret; I love, love, love to eat out. Don’t get me wrong, I enjoy cooking. But there’s something about eating out (having someone else do all the cooking and the dishes), that thrills me. Unfortunately, my budget doesn’t allow me to eat out for every meal or have my own personal chef. Sometimes, though, I have a craving for one of my favorite restaurant items, and decide, “Hey! I could recreate that at home!” During a recent visit to Red Robin, I tried Freckle Berry Lemonade for the first time and thought, “Where has this delicious drink been all my life?” Even better, the recipe is super easy. It only has four ingredients, two of which are water and ice, and it is naturally gluten free so the entire family can enjoy it.
Begin by setting a container of frozen strawberries with syrup in the fridge to thaw. Allow the strawberries to thaw until the mixture has some thawed syrup, but the strawberries are still icy.
Make a pitcher of lemonade. You can make it from scratch if you want, or make it the simple way from a can of frozen lemonade concentrate. Just make the frozen lemonade as directed and set aside to chill.
When you are ready to make the drink, add ice cubes to a blender and crush. The amount of ice cubes will vary, depending on how ice you like in a drink. I like to add the crushed ice until the glass is 1/2 full.
Add three tablespoons of the strawberries with syrup to each glass.. If you like more or less strawberries, adjust the amount to your taste. Top the ice and strawberries with lemonade until the glass is full. Stir the mixture gently to mix the strawberries though out the glass.
Easy, refreshing, and fancy enough for entertaining! That’s my kind of recipe. Do you have a favorite summer drink recipe?
