It’s the 4th of July and around our house that means food, family and fun in the sun.  We usually have a cookout with our extended family and it’s my job to bring dessert.  I wanted to use some fresh blueberries I had purchased on sale and also some strawberries.  That’s when I thought, why not make a classic dessert for 4th of July? At first I thought about making homemade strawberry and blueberry ice cream, which I really wanted, but that involved a lot of effort. Mainly borrowing an ice cream freezer from my inlaws and cranking it for thirty minutes by hand.  So…on to something easier to create.  These simple Red, White and Blue Parfaits come together in no time– a huge plus for me–and can also be assembled into a trifle dish, which is even easier if you have to feed a crowd and are in a hurry.  Use purchased angel food cake or pound cake and this dessert can be ready in minutes.

A super easy parfait that can be made with low fat ingredients, if preferred. This can also be served in a trifle dish.
Ingredients
  • 3 cups pound cake or angel food cake, cubed
  • 1 package (3 ounce)cheesecake or vanilla pudding mix
  • 2 cups milk
  • 1 cup whipped topping (like Cool Whip)
  • 2 cups strawberries, sliced
  • 2 cups blueberries
Instructions
  1. Mix pudding mix with milk, stir until combined. Place in fridge until set, about 10 minutes. Remove from fridge, stir in whipped topping. Using 8 parfait glasses, layer cake on the bottom and top with pudding mixture. Add a layer of blueberries, more pudding mixture and a layer of strawberries. Serve immediately or store in the fridge until ready to eat.
