Rocky Road Brownies Recipe

Being stuck at home can be a challenge. To combat this, some of my friends and I have teamed up to create “What are you reading Wednesdays?” I have a bookcase full of cookbooks I’ve collected over the years that I thumb through but rarely use. I decided this was the perfect time to pull them off the shelf, dust them off, and try at least one new recipe from each one for my family.

This week I found Quick Fixes With Cake Mixes: Great Tasting Cakes, Cookies, Bars, and Goodies Made with Mixes by Lia Wilson. While browsing the recipes, I found this Rocky Road Brownies Recipe. Not only does it use common ingredients, but most of them are also shelf-stable so you can keep them on hand when you need a treat.

Rocky Road Brownies Recipe

This recipe is simple to make because it begins with a box of brownie mix and only has seven ingredients, including water. You can use whatever brownie mix you like. The trick is to make the brownies cake-like instead of “fudge-y.”

Rocky Road Brownies Recipe
Recipe Type: dessert
An easy 7 ingredient (including water) brownie recipe. Make the recipe gluten-free by using a gluten-free brownie mix.
Ingredients
  • 1 box (18.25 ounces) brownie mix
  • 2 eggs
  • 2/3 cup vegetable oil
  • 1/4 cup water
  • 3 cups miniature marshmallows
  • 1 cup toasted pecans, chopped
  • 1 1/2 cups chocolate chips
Instructions
  1. Preheat the oven to 350°F.
  2. In a large bowl, mix together brownie mix, eggs, vegetable oil, and water until blended.
  3. Spray a 9″ by 9″ baking dish with cooking spray. Pour brownie mix into the dish.
  4. Bake brownies for 18-22 minutes. Remove from oven.
  5. Immediately sprinkle marshmallows onto brownies. Top with pecans and chocolate chips.
  6. Allow to cool completely and cut the brownies into squares.

 

Recipe Hints:

Make it Gluten-Free: All you need to do is substitute a gluten-free brownie mix for the regular mix.
To keep the edges of the brownies from burning, place aluminum foil around the edges.
Use whatever type of chocolate chip you prefer. The recipe is good with milk chocolate, semi-sweet chocolate, white chocolate, or dark chocolate chips.

Fast Fixes with Cake Mixes

One of the things I appreciated about this book is that the ingredients are easy to find in most grocery stores. Most of the recipes have ten ingredients or less. The directions are simple enough that even a beginning cook can follow them and the back of the book explains, in everyday language, cooking terms and ingredients you’ll want to be familiar with. The list of substitutions is helpful for when you find yourself missing “that one item” and don’t want to run to the store.

One thing the book is missing is pictures. While this isn’t a big deal to me, some people appreciate seeing pictures of the recipes. The last printing of the paperback version of this book was 2007, but it is available on Amazon. I picked up my copy at our local used book store, which is a great place to search for cookbooks. Yard sales, rummage sales, and estate sales are also a great way to find vintage books.
