Halloween has always been one of my favorite holidays. Growing up it was one of the few times a year I got candy. Naturally  that pushed it to the top of my list.  These days I attend or host a Halloween gathering with friends and family each year.  I was on the lookout for something new and different to make this year when I was challenged to use some yummy Hershey’s candy to make a recipe and a craft.  As I was looking through my fudge recipes I thought, “Why not add Rolos? That is one of the kids’ favorite candies.  I adapted my Cookies and Cream fudge recipe to make Rolo Fudge.  Instead of using the traditional white chocolate, I used orange candy coating, but any Halloween colored candy coating could be used. This would look cute with lime green too.  The fudge is very rich so a tiny piece should satisfy any chocolate or caramel craving.

A rich, thick fudge that will be sure to have everyone saying, “Boo!”
Ingredients
  • 1 (12 ounce) bag candy coating, in color of your choice
  • 1/8 teaspoon salt
  • 1/2 of an (11 ounce) bag Rolos, unwrapped (approximately 24)
  • 7 ounces sweetened condensed milk
  • 1 teaspoon vanilla
Instructions
  1. Chop Rolos in fourths. Set aside. In a microwave safe bowl, melt candy coating for 1 minute in microwave. Stir. If not completely melted, microwave for 30 seconds more. Add sweetened condensed milk, salt and vanilla. Return to microwave for 30 seconds. Stir. Add Rolos and stir until well mixed. Place mixture in a greased 9″ by 13″ bowl and freeze for one hour. Cut into squares and top with Rolo Ghosts (instructions below), if desired.

I wanted the fudge to be dressed up for Halloween so I topped them with Rolo Ghosts. These are so simple to make and the kids love to help. Plus, they only have three ingredients!  I unwrapped 24 Rolos and set them on a piece of waxed paper.  Working with 1/2 pound of Fondant, I pinched off 1 inch balls, rolled them flat and covered the Rolos with the fondant.  When I wasn’t satisfied with how the ghost looked, I used a pizza cutter to trim excess fondant and shape their ghostly robe. Finally, I made two eyes and a mouth with sparkly black glitter gel.  I was pleased with the unique look of each ghost.
