Rotel Sausage Cheese Dip

Want to know a Southern Secret? We have five seasons. Sure, we have the usual; winter, spring, summer, and fall. We also have the most important season; football.  Whether it’s the SEC or a high school game, for lots of Southern folks,  life revolves around the big game.  I’ll admit, I was never a fan of football until my son went away to college. Suddenly, I found myself driving five hours to watch a game and spend the weekend. That’s when I discovered what makes football so special; a tailgate party.

3 Ingredient Rotel Sausage Cheese Dip Recipe

Tailgate food is the best. Ribs, barbecue with all the fixings, burgers. I was hooked from the first game. Of course, I had to add some of our family favorites to the mix.  After all, I have to do my part to keep the tailgating tradition alive.  An easy favorite is our not-so-secret  Rotel Dip recipe.  It can be prepped in less than fifteen minutes and made either on the stovetop or in the Crockpot.

Did I mention it is gluten-free and has only 3 ingredients?  I’ve heard this called by many names; Sausage dip, sausage cheese dip, whatever.  No matter what it’s called, we call it delicious.  It’s so good, sometimes my daughter asks to have it for dinner.

How to Make Rotel Dip: 

You need processed cheese spread (think Velveeta), Rotel tomatoes with green chilies, and sausage. That’s it! You can easily adjust the “spiciness” of the recipe by using mild or hot sausage and mild or hot Rotel tomatoes.

To Make the Dip:
Step 1: Slice the Velveeta into cubes. This is a huge step in allowing it to melt quickly.

Step 2:  Crumble the sausage and cook until the sausage is no longer pink. Drain the sausage on a paper towel.

Two Methods To Make the Dip:
If you want to use the Crockpot method:
Add the crumbled, cooked sausage to the Crockpot. Top with cubed Velveeta and Rotel. Stir until blended. Cook on low for four hours or on high for two hours. Stir before serving.  I recommend this method because it allows the flavors more time to blend.

If you want to use the stovetop method: Add the crumbled cooked sausage, cheese, and Rotel into a large saucepan. Cook over medium heat, stirring constantly until cheese is melted.  Serve with chips, crackers or veggies.

Sausage Cheese Dip
Recipe Type: dip or appetizer
This easy 3 ingredient dip is gluten-free and tastes delicious!
Ingredients
  • 1 pound Velveeta cheese, cubed
  • 1 (10-ounce) can Rotel tomatoes, your choice of spicy or mild–DO NOT Drain the liquid
  • 1 pound sausage, crumbled and cooked
  • Crackers, Chips or Veggies
Instructions
  1. Crockpot Method
  2. Place the sausage on the bottom of the Crockpot.
  3. Top with undrained tomatoes and cubed cheese.
  4. Stir.
  5. Cook on low heat for 4 hours or high heat for two hours.
  6. Stove top method:
  7. In a medium saucepan, add the sausage, tomatoes, and cubed cheese.
  8. Cook over medium heat, stirring constantly until cheese is melted.
  9. Remove from heat and serve.

Cooking Tips:

*You can substitute any type of canned diced tomatoes and chilies for the Rotel brand.
*Be sure to cube the cheese before beginning!
**If using the stovetop method, be sure to stir constantly.
