Savory Scalloped Ham, Bacon & Potatoes Recipe


During the holidays I manage to be invited to several holiday “potluck style” parties.  When I ask what I need to bring I am usually told “a dessert and some kind of casserole.” Living in the South, I have a supply of casserole recipes on hand at all times, but sometimes I run out of time and need something I can throw together in a hurry.   That’s when I turn to a packaged mix, like Betty Crocker Casserole Potatoes, who are sponsoring today’s recipe, and whip up something.   Scalloped potatoes are usually a hit with everyone so I jazzed up a basic mix with ham, bacon, cheese and onions.

Here’s all you need to make it:
Ingredients for potatoes

Begin by mixing the scalloped potato sauce, milk, water and butter together as directed on the package. Stir in the ham.

Saute the onions and cook the bacon.  Drain and crumble the bacon.

Place the potatoes in a casserole dish, cover with the ham and sauce mixture. Add the onions and crumbled bacon. Stir well.

After mixing all the ingredients together, I topped the casserole with small slices of cheese. I had planned to use shredded cheese, but my family had used all of it without letting me know.  Small cut up slices of provolone worked just as well and gave it a great flavor.  The entire dish, from start to finish, took around 35 minutes to prepare.  After dinner Bryan told me, “This is good. Feel free to put this into the menu rotation and make it again.”  I love when I come up with a simple recipe that is a major hit!

Savory Scalloped Ham, Bacon & Potatoes Recipe
Ingredients
  • 1 package Betty Crocker Scalloped Potato mix
  • 3/4 cup milk
  • 2 cups boiling water
  • 2 tablespoons butter
  • 1 1/2 cups chopped ham
  • 6 slices bacon, cooked and crumbled
  • 3/4 cup onion, chopped
  • 1 cup shredded cheese
Instructions
  1. Mix milk, water, butter and sauce mix from potato package together until blended. Add in ham, crumbled bacon and onion. Stir. Place potatoes in a 9″ by 9″ casserole dish. Pour ham and sauce mixture over potatoes. Top with shredded cheese.
  2. Bake at 350 degrees for 20 to 25 minutes or until potatoes are tender.

  7. I use those Betty Crocker Scalloped Potatoes all the time. When my husband said he couldn’t tell the difference between those and homemade, that was all it took for me to know I would be using those from that point on. This looks like a great recipe for me to try.
