“Scooby Dooby Doo, where are you?” This theme song brings back tons of memories from my childhood. I spent a lot of time wondering why I was more like Velma, extremely nerdy, instead of like Daphne. When I had kids I introduced them to Scooby Doo. We watched a lot of Scooby. We hadn’t watched Scooby in a while, mainly because we have Scooby on VHS, but no VHS player. “I want to see a Scooby Doo movie,” I told Bryan. He’s used to my eccentric behavior and asked me, “Can’t you watch it on Netflix?” “I don’t think it’s on there,” my son said, “I already checked for her.” Imagine my surprise when I opened my Netflix #StreamTeam email this month and discovered it’s throwback month. And guess which show popped out at me first? Scooby Doo! Now I’m planning a Scooby Doo family night. I wanted to make a Scooby Snack to go with our viewing, and discovered the Scooby Snack cocktail.
After looking at the recipe and discovering everything in the recipe is alcoholic. Since there is no way I will be serving that to the kids, I decided to make my own Scooby Snack Mocktail. (Bonus, it’s Gluten Free and Dairy Free!) First, I had to find some substitutions for all the liqueur, so I used fruit juice and fresh fruit. Not only is this mocktail good for a Scooby viewing night, it’s even good for breakfast.
Naturally, this was super easy to make. Chop the banana into pieces and place in a blender. Then, add the frozen melon chunks, and pineapple with juice. Add the coconut milk (or coconut flavoring) . I threw in some ice to give it a icy texture. Then, I blended until smooth.
- 1 banana, sliced into chunks
- 1 cup frozen melon chunks
- 3/4 cup crushed pineapple in juice
- 1 cup coconut milk
- 1/2 cup ice
- Mix all ingredients together in a blender until smooth. Serve immediately.
