Simple Strawberry Pops Recipe

School is almost out for the summer. It’s time for the kids to play outdoors, enjoy the sun and murmur those three little words designed to annoy parents, “Mom, I’m bored.” My kids have learned over the years that it is hazardous to mumble these words in front of me because I have an unending list of chores I don’t have time to do. “Oh, you’re bored?” I say, “You can start by cleaning your room. The car needs washing. I have laundry waiting to be folded.” Before I can even finish my list of basic chores, the kids have recanted their statement and headed off in search of things to do.  Before you imagine I saddle my kids with chores the entire summer, we try to spend a lot of time as a family doing fun activities and possibly sneaking a little education in along the way.  One tasty way to spend family time is preparing fun dishes together. They get to have a treat and I can sneak in all sorts of educational opportunities, math with measuring, chemistry with mixing, cooking skills and reading.  We’re beginning this summer with a new twist on dipped strawberries– strawberry pops.

They are like classic dipped strawberries with the cool addition of being on placed on a lollipop stick.  Better yet, they come together quickly, only take a few ingredients and can tempt the pickiest eater to try fruit. Other fruit like cherries, apple or peach slices and grapes could be substituted or added to make a virtual “popfest.”   Some tips on making the strawberry pops: wash the fruit and pat it dry before you begin.  Also be sure any stems are removed.   Have all your supplies ready as the white chocolate hardens quickly.

What you’ll need:
1 package (16 ounces) strawberries,
1 cup (8 ounces) white chocolate chips
Lollipop Sticks
Optional: colored sugar, nuts, or sprinkles.
Melt the white chocolate chips in a microwave safe bowl on high power for 45 seconds. Stir, and microwave for 45 more seconds. Stir until smooth.

Insert a lollipop stick into the stem end of the strawberry. Quickly roll the strawberry in the melted chocolate and then immediately roll in nuts, sprinkles or colored sugar. Place on waxed paper to harden.

  3. Very good idea– I never think of melting chocolate ( or white chocolate) when it isn’t Christmas time– and I really should since it’s so easy to pop it in the microwave and coat fruit and pretzels, etc… for healthier treats.
