Simple Strawberry Trifle Recipe

I’ve mentioned several times diabetes runs in our family. With four of my great grandparents, two of my grandparents, and my father diagnosed with diabetes, my daughter mumbles darkly, “You’re time is coming, Mom!” I’m able to counter, “Your’s too!” since both my in-laws have diabetes and my husband has prediabetes.

While we’ve always eaten relatively healthy, I’m all for incorporating sweet treats into our diet. I think sweets are one of the major food groups. Or they should be! Over the years I have learned to adapt sweet treats to diabetic friendly versions. My motto when cooking is, “Food should taste good!” I’d rather do without sweets than have a version that tastes bad.

I’ve been purchasing the new Equal Sucralose canister and presenting homemade desserts (and canisters of Equal) to friends and family. When asked to make a Spring treat, I tried to think of foods that remind me of Spring. Strawberries were my first choice. I created this simple, delicious strawberry trifle with six ingredients and received rave reviews. This one is a keeper! I plan to make it all summer.

Ingredients:
1 6 count package Sugar Free Dessert Shells
1 16 ounce package strawberries
1 3.5 ounce package sugar free pudding (can use your favorite flavor-I used french vanilla)
2 cups Skim Milk
1 1/2 cups Equal Sucralose

 

Slice the strawberries into thin slices and cover with Equal Sucralose. Stir until the Equal is mixed into the strawberries. Set this bowl aside.

Mix the pudding as directed on the package. Set this bowl aside.

Depending on how fancy you want to get, use six stemmed goblets or a bowl to prepare the trifle. If using goblets, tear each of the six dessert shells into pieces and add one to the bottom of each glass. If using a bowl, put all the pieces in the bottom. Alternate layers of pudding and strawberries. Top with whipped cream. Store in the fridge until ready to eat. Doesn’t the finished product look pretty?
