Slow Cooker Beefy Beer Stew Recipe

The Southern winter weather in our area is weird. One day it’s 70 degrees and sunny. The next day it’s 30 degrees and spitting snow flurries. It’s on those 30 degree days when I crave soup.  If I can make a pot in my slow cooker so I don’t have to spend the evening bent over a stove it’s even better. While I was browsing through my recipe collection, I came across this Slow Cooker Beefy Beer Stew Recipe I created in 2012.

I enjoy using my slow-cooker for a variety of reasons. It’s versatile. I can use it to cook everything from appetizers to desserts. It’s economical because I can use cheaper cuts of meat due to the long cooking process making these cuts soft and tender. But, the best reason is that I can come home to a hot meal I don’t have to spend the afternoon cooking. Score!

Slow Cooker Beefy Beer Stew Recipe

 It’s a delicious, hearty, stick-to-your-ribs kind of stew loaded with chunks of tender beef and a variety of veggies. And, I’m not the only one who thinks it’s delicious. This recipe won 2nd place when I entered it into the “Crockin’ in America” national recipe contest. Try it for yourself and see if you agree.

Updates:

I updated my original recipe to include a few things I had on hand.

  • Instead of using a package of frozen mixed vegetables, I used a package of frozen okra I had cut up and placed in the freezer a few weeks ago.
  • I also added some peeled cubed potatoes I needed to use.

I think this made it even better than the original. Feel free to get creative with the stew and use your favorite vegetable blend or even leftover vegetables from the fridge. Tip: Don’t use coated or fried vegetables in this recipe.

Substitutions:

  • Replace the beer with 2 cups of beef broth.
  • Replace the potatoes and okra with 4 cups of frozen mixed vegetables.
  • I used 1 (28-ounce) can and 1 (14.5-ounce) can diced tomatoes with basil and garlic. You can substitute 3 (14.5-ounce) cans if needed.
  • You can also substitute diced Italian-style tomatoes if you prefer.

How to Make The Stew Gluten-Free

  • Replace the beer with gluten-free beer.
  • Important Note: Be sure to check the seasoning package to make sure you choose a gluten-free brand, if necessary.

How to Make the Stew Dairy Free:

  • Omit the cheese or replace it with a dairy-free blend.
  • Use vegan margarine to replace the butter. I prefer to use Earth Balance Soy Blend if you are searching for a brand to try.

A thick, hearty soup with a great flavor. You can substitute whatever veggies you have in the fridge.

Ingredients

  • 3 tablespoons butter

  • 1 1/2 pounds beef stew meat, cubed

  • 2 teaspoons minced garlic

  • 1 medium yellow onion, chopped

  • 1 medium russet potato, diced

  • 1 (16-ounce) package unbreaded frozen okra (or replace the okra and potato with 1 (16-ounce) package frozen vegetable blend

  • 1 (28- ounce) can plus 1 (14.5-ounce) can diced tomatoes with basil and oregano

  • 2 cups beer or beef broth

  • 1 package Beef Stew Mix (found in the seasonings section)

  • 1/2 cup shredded Italian blend cheese, optional

Directions

  • Melt butter in a large skillet over medium high heat. Add the beef stew meat, onion, and garlic. Cook, stirring often, until onions are translucent and meat is browned on all sides, about 5 to 7 minutes.
  • Transfer beef mixture to the crockpot. Add potatoes, okra, tomatoes, and beer. Stir to mix.
  • Add the seasoning packet and stir until blended. Cover and cook on high for 4 hours or on low for 4 hours.
  • Garnish with shredded cheese, if desired.

Notes

  • You can adapt this recipe to make more soup by using 2 (28-ounce) cans of crushed tomatoes, adding an additional 2 cups beef broth, another potato, another 1/2 to 1 pound of stew meat, and 1 additional package of beef stew mix.
