Grilled Garlic and Butter Salmon Pasta Salad recipe

I had been reading the benefits of adding more fish and seafood to our diet and wanted to try more salmon.  My son and husband were convinced they would not like salmon, but  I assured them I could find a recipe they would enjoy.  I found a salmon pasta salad recipe and adapted it to suit our tastes, using veggies we enjoyed and packages of Gorton’s Simply Baked Roasted Garlic and Butter Salmon.  The result was a  recipe that was not only good, it was a #wickedgoodseafood recipe.  I used gluten free pasta so my daughter, who has celiac disease, could have it too.  Usually I can tell gluten free pasta from a mile away because it doesn’t taste as good as regular, but used in this recipe I couldn’t tell the difference.  Feel free to add or change veggies to suit your taste.  I think mushrooms or cucumbers might be good additions too.

Ingredients
  • 1 package (8 ounces) spiral or bow tie pasta, cooked and drained (can also use gluten free)
  • 2 packages Gorton grilled salmon, in flavor of your choice, cooked as directed on package
  • 1-1/2 cups cherry tomatoes, sliced
  • 1 medium yellow bell pepper, diced
  • 1 small onion, diced
  • 1/2 cup vegetable oil
  • 1/3 cup lemon juice
  • 1-1/2 teaspoons dill weed or 1/4 cup fresh dill, minced
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup sliced black olives
  • 1/2 cup Asiago or Parmesan cheese, shredded
Instructions
  1. Cook salmon as directed on package. Break into small pieces. Mix the salmon with the cucumber, onion, olives and cheese. Stir until blended. Add this mixture to the pasta. Meanwhile mix oil, lemon juice, dill, garlic, salt and pepper together. Shake until blended. Pour over pasta and stir. Serve immediately or place in fridge to chill.

  20. Salmon is one of my favorites! I don’t eat pasta on keto but I do eat a lot of salmon because it has a high Omega 3 fatty acid profile. Glad your family liked it!

  23. My kids love their fish sticks. I’ve never had this one and I love that it already comes pre-seasoned. I’m a big fish lover having grew up in the Caribbean and in NY where I can go the fish market and hand pick my fish.Will have to keep an eye out for this one.
