Lemon Pineapple Smoothie

Can you believe it’s almost time for back to school?  In our area school starts the first week of August, which leaves the kids coming home tired, hot , grumpy and complaining that it is still summer time.  I needed some quick and easy meals to cheer them up and found the answer with Nestle Meal Solutions.  I’ve been able to whip up some quick and easy meals to ward off the after school hunger pangs.

The kids are always “dying of thirst” and ready to grab something to drink, so I adapted a refreshing Lemon Pineapple smoothie to help them beat the heat. This one substitutes Edy’s Outshine Fruit Bars for the original ice cream called for in the recipe to create the same rich, dreamy taste with a huge reduction in fat and calories! I call it a win-win because I can have one too.

Ingredients:
2 Edy’s  Pineapple Outshine fruit bars
¼ cup pineapple
½ cup lemon lime soda (can use diet)
1 tablespoon lemonade concentrate

Directions:  Place all ingredients in a blender and mix until smooth. Serve immediately.ultimate chocolate candy surprise bars

My kids have a sweet tooth so I came up with the Ultimate White Chocolate Brownie (almost) guaranteed to beat the back to school blahs. They taste so good that it’s hard to eat just one with their rich combination of white chocolate and a surprise candy treat inside. They are very rich so I could only eat a small amount at a time but they received high praise from everyone who tasted them.  I used Nestle Buncha Crunch and Butterfinger Bites but if you wanted a different taste you could substitute Raisinets. 

White Chocolate Candy Surprise Bars

A yummy dessert bar with a candy surprise inside.
Ingredients
  • 1 cup butter
  • 3 (1 ounce) squares white chocolate, chopped
  • 4 eggs
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup each Nestle Buncha Crunch and Butterfinger Bites
Instructions
  1. Preheat oven to 350 degrees. Melt the butter and white chocolate together in microwave for thirty seconds. Stir, Microwave for 30 more seconds or until melted. stirring after every 30 seconds. Stir until smooth. Meanwhile beat eggs , sugar and vanilla in a mixing bowl. Add in the butter mixture, and stir in the flour and salt until thoroughly combined. Mix in the Nestle Buncha Crunch and Butterfinger Bites.
  2. Pour into a greased 9″ by 13″ baking pan and bake 30 to 35 minutes until a toothpick inserted into the center of the pan comes out clean, Allow to cool in pan 10 minutes before slicing.

Even though the kids love for me to prepare snacks for them,  my son is just as happy to have a Hot Pocket. They are his go to meal whenever he wants a snack or for lunch. Whenever he accompanies me to the store he asks, “Are we going to buy Hot Pockets today?” This is perfect for busy days when I don’t have the time or energy to cook.

  4. Mmmmm I love the smoothie idea–especially considering that when you used the Edy’s Outshine Fruit Bars it reduced the fat and calories! And the Dessert Bar recipe looks super tasty-mmmmmm!!!! I love the idea of mixing special snacks that you create in with easy-peasy grab and go snacks like drumsticks and Hot Pockets–definitely a win/win!
