S’mores Cookie Bars Recipe

It wouldn’t be fall without making S’mores.   Marshmallows, chocolate and crackers smashed together and dripping with ooey goodness? Yes, please.  This semi-homemade recipe, which can be made gluten free, allows me to make those delicious bits of fluffiness anytime of year, without the risk of burnt marshmallows or fingers.

I started with a package of cookie dough, flour, cocoa, graham crackers, marshmallows and some hot fudge ice cream topping.  You can make the recipe gluten free by using gluten free cookie dough, flour and graham crackers. You can also eliminate the flour if you’d like.

Mix the flour, cookie dough and cocoa until well blended. Spread evenly across the bottom of a 9″ by 13″ pan. I always spray my pans with cooking spray -like Pam- or line with aluminum foil for easier removal.  Bake the cookies for 8- 10 minutes in a 350 degree oven. Tip: You want the cookies to still be soft when removed from the oven.

While the cookies are baking, crush the graham crackers.  I use a food processor to make the job easier.  Remove the cookies from the oven and IMMEDIATELY top with the graham cracker crumbs and marshmallows.  As soon as the marshmallows have  begun to melt, warm the hot fudge and drizzle it over the marshmallows. These can be served warm or cold.

S’mores Cookie Bars Recipe
Ingredients
  • 1 package refrigerated (12 ounces) sugar cookie dough (regular or gluten free)
  • 1/2 cup cocoa
  • 1/2 cup flour (regular or gluten free)
  • 6 ounces marshmallows (use around 3 cups mini marshmallows)
  • 1 cup crushed graham crackers
  • 3/4 cup hot fudge ice cream topping
Instructions
  1. Mix cookie dough, cocoa and flour together until blended. Spread cookie dough mixture into a 9″ by 13″ foil lined pan. Bake 8 to 10 minutes. You want the cookie dough to still be soft when removed from oven.
  2. Immediately top the warm cookies with graham crackers and marshmallows. When the marshmallows have begun to melt, top with heated hot fudge sauce. The cookies can be served hot or cold.

  23. We camp on weekends six months per year and it is at this time each year that we really start to go through withdrawals. We will be camping again soon but boy do we miss our smores. This is a great way to curb our cravings while we wait.
