It is almost apple picking season in Georgia. Every year we try to take a trip to Ellijay, the apple capitol of Georgia, to pick up a bunch of the sweet treats. We stop at one of the apple stores in the area and browse through their collections of local produce and goodies, like apple butter, apple relish, apple salsa and more. The kids each choose one treat for us to try and we bring them all home, along with our baskets of apples. We try to make several new recipes each year with our bounty. This year I have been browsing for apple recipes and came across a Blueberry Sour Cream muffin recipe from Taste of Home magazine. I adapted it to feature apples and it is delicious. The recipe made eighteen muffins and I watched as they disappeared quickly. These are great the night before and heat up for a few minutes in the microwave the next morning or to freeze and reheat for later. You can also change the preserves to any flavor you like or add fresh or frozen fruit.
- 2 cups Baking mix (like bisquick)
- 3/4 cup plus 2 tablespoons sugar, divided
- 2 eggs
- 1 cup (8 ounces) sour cream
- 1 jar (8 ounces) apple preserves
- n a large bowl, combine the biscuit mix and 3/4 cup sugar. In a small bowl, combine eggs and sour cream; stir into the dry ingredients just until combined. Stir in apple preserves. Note: If you want extreme apple filling, use a 16 ounce jar of preserves. Fill greased muffin cups three-fourths full. Sprinkle with remaining sugar. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

those muffins look really good. We went to georgia on vacation last fall and stopped by mercier orchards to check out the apple farm. I wish we could apple pick here in florida

When we bought my daughters crib many years ago we searched out for the perfect crib. We found something that worked for us, but the cribs these days seem to be much more safe and just better made.

Sour cream makes baked goods so moist. I bet these muffins are delicious. I’m not usually a big fan of Bisquick but maybe the sour cream alters the taste. Will have to try this one with the kids. It seems like one they could handle.

OMG these brought back some memories of a restaurant my grandma used to take me to when I was little. It was at an apple orchard and everything was “apples”. These muffins look to die for… will definitely have to make them!
