When I was a kid we had a large garden. One of the crops my parents loved was cucumbers. We had so many! Sometimes we’d have four 5-gallon buckets sitting on the back porch just waiting to be used. My mom made them into pickles-dill pickles, bread and butter pickles, pickle relish, you name it. But my favorite way to eat them was this in this recipe for Sour Cream Pickled Cucumbers and Onions. I could make this all by myself starting at an early age and I thought it was the best way to enjoy a cucumber. I’d make platefuls of this as a snack and leave them in the refrigerator until I was ready for them. When my kids were younger, I began making this for them. They’re still happy to see a dish of these appear on the table.

Sour Cream Pickled Cucumber and Onions
One of the best things about this recipe is how easy it is to make. It calls for four ingredients, plus salt and pepper. I’m a big fan of preparing easy dishes with common ingredients. I hate to have to run to the store for something like “truffle oil.” How often am I going to use that??? This dish requires no cooking, but it does require some chilling time for maximum flavor so plan ahead. The Sour Cream Pickled Cucumbers and Onions will keep up to three days in the fridge so they can be prepared in advance.
Here’s what you need to make them
2 cucumbers (use medium-sized cucumbers)
1 large onion, peeled
salt and pepper to taste
Enough vinegar to cover the cucumbers and onions (around 1 to 2 cups)
1/2 to 1 cup sour cream, depending on taste
How to make them:
1. Slice cucumbers into thin slices.
2. Slice onion into thin slices.
3. Place the onions and the cucumbers into a shallow bowl.
4. Add salt and pepper to taste. (About a teaspoon of each.)
5. Pour enough vinegar over the cucumber mixture that the cucumbers and onions are covered.
6. Refrigerate until chilled. (Let them get really cold, approximately two hours.)
Then the rest of the recipe can be prepared in three ways. It’s up to you. You can either drain the vinegar from the cucumbers and then mix in the sour cream.
OR you can leave the vinegar and mix in the sour cream. Then, to serve, use a slotted spoon to remove the cucumbers and onions from the dish when ready to serve. OR you can omit the sour cream altogether. Whatever sounds good to you.

Preparation Tips for Sour Cream Pickled Cucumbers and Onions
**Try to slice the cucumbers and onions as thinly as possible.
** You don’t have to peel the cucumbers unless you want to.
**You can use your favorite type of vinegar in this recipe. I like to use Prosecco Wine Vinegar. It’s not the cheapest vinegar, but it gives it a really good taste.
**Want to make this dairy-free (and vegan)? Either omit the sour cream or use a vegan sour cream.
**It’s best to use a mild onion, like a yellow onion or a Vidalia onion, in this dish.
