Southwestern Cheese Puffs Recipe

Are you ready for some football? It’s almost time for the Superbowl and that means entertaining friends and family at Superbowl parties. I try to plan my menu with dishes that can be prepared in advance and served so I won’t miss a moment of the big game. (Truthfully, I watch for the commercials so I don’t want to miss any of the game.)  This year I created a recipe using Del Monte using their new  Petite Cut® Diced Tomatoes with Green Chilies.  They  are the perfect way to spice up main dishes and snacking recipes and save prep work for me.  Like most of my recipes, this is  quick, simple and  a hit with my family.  “Hey, this is really good!” was my husband’s first words when he tried one.

Ingredients needed:
One package crescent rolls
One can (14.5 ounces) Del Monte Petite Cut Diced Tomatoes with Green Chilies, drained
One can (2.5 ounces)  sliced olives
One package (8 ounces) whipped cream cheese
1/2 cup chopped onion
2 tablespoons shredded Mexican cheese

Directions:
Unfold crescent rolls and shape into one large square. Use a glass to roll the square into a thin sheet.  Cut the sheet into 12 squares and place one square each into twelve greased muffin cups.  Bake the squares at 350 until lightly browned and flaky. Meanwhile, saute the onion in two tablespoons oil until tender. Add olives and well drained tomatoes to the onion. Blend in cream cheese and stir until well mixed. Place two tablespoons cream cheese mixture into each crescent roll.  Top each crescent roll with a sprinkle of shredded Mexican cheese. Place under the broiler for three minutes or until cheese is melted.
