Gluten Free Southwestern Meatloaf Recipe



The holidays are upon us and, with the myriad of activities, some days, when the stress gets to be too much, I crave comfort food. I also don’t mind having a recipe I can feed to unexpected guests that doesn’t take much prep time. One of Bryan’s favorite dishes is meatloaf, he has fond memories of home cooked meals on Christmas Eve, featuring his favorite dish. The downside to his favorite dish? No one else in the family is as fond of meatloaf as he is. Thanks to Mezzeta, who is sponsoring today’s recipe, I’ve managed to jazz up the meatloaf for a comforting holiday meal the kids have proclaimed “really good.”
Southwestern Meatloaf  Recipe

This meatloaf is so simple to make, but the few “extra” ingredients really perk up the flavor. My daughter requested we also try it substituting spaghetti sauce the next time we have it.  I guess that would make it an easy Italian meatloaf.  Here’s what you need to make it:
southwestern meatloaf ingredientsBefore you begin place  the roasted red pepper strips and garlic stuffed olives in the blender for a few seconds until they are chopped.  The rest is simple! Combine all the ingredients until well mixed and place in a 9″ by 9 ” casserole dish.  Top with the remaining salsa and bake at 350 degrees for 30 to 40 minutes.

A gluten free twist on a classic meatloaf recipe
Ingredients
  • 2 lbs hamburger meat
  • 2 eggs
  • 2 teaspoons onion & herb seasoning
  • 3 cups salsa, divided
  • 1/2 cup ketchup
  • 15 Mezzeta garlic stuffed green olives
  • 3/4 cup Mezzeta roasted red peppers
Instructions
  1. Place olives and roasted red peppers in blender; chop. In a large bowl mix the meat, eggs, seasoning, ketchup, garlic/pepper mixture and 1/2 of the salsa. When mixture is blended, place in a 9″ by 9″ casserole dish. Top with the remaining salsa and bake at 350 degrees for 30 to 40 minutes.
