I received a bottle of Bloody Mary mix for Christmas. I was unsure what to do with it as I am not a fan of the drink. I planned to offer it to a friend when my daughter asked, “Why don’t you use it to make soup?” I took this idea and ran with it to make this Spicy Creamy Tomato Soup recipe. This soup provides all the comfort of cream of tomato soup with a slight kick.
Spicy Cream of Tomato Soup
Not only does this soup come together in around 30 minutes, but it’s also naturally gluten-free. Serve the soup with a grilled cheese sandwich for a quick hearty meal. Although this is classic comfort food if you want a fancier version, add 1 pound of cooked, peeled shrimp or 1/2 pound of lump crab meat or imitation crab meat. Tip: You can usually find Bloody Mary Mix on the drink aisle or the beer/wine aisle in stores.
Substitutions:
- For a thinner soup with less fat, substitute half-and-half for the heavy cream.
- For a very thin soup, you can use whole milk instead of cream or replace the heavy cream with a mixture of equal parts whole milk and half-and-half.
- Use diced tomatoes with chili peppers (think Ro-tel) to replace the diced tomatoes.
- Experiment with different brands and flavors of Bloody Mary mix to find the blend you like best. I’ve used both the Rich n’ Spicy flavor and the mild flavor.
Additions and Garnishes:
- Garnish the soup with your favorite shredded cheese. Parmesan, Sharp Cheddar, or any other strong, flavorful cheese works well.
- Add homemade croutons (see our easy recipe here) to the soup just before serving.
- Add 1 pound of cooked, peeled, and deveined shrimp or 1/2 pound lump crab meat (or imitation crabmeat) during the last five minutes of cooking time.
How to Freeze Leftover Celery and Onion
Want a flavorful blend to have on hand for soups, stews, casseroles, stir-fry, and more? Freeze a blend of leftover celery and onions. Here’s how to do it:
- Chop celery into thin slices approximately 1/4 inches thick.
- Dice onion. Mix the celery and the onion together.
- Place 1 cup of the celery/onion mixture into pint-size airtight freezer storage bags. Freeze up to 3 months.
- To thaw: Place the mixture in the fridge for 4 to 6 hours. Or place in a microwave-safe container and microwave on high for one minute, stirring after every 30 seconds. Drain and use.
- To be able to store celery in the freezer for up to 1 year, blanch it for 3 minutes before chopping. Then, follow the freezing directions listed above.

Can you freeze Cream of Tomato soup?
Unfortunately, no. Soups with a base of dairy products will separate and become grainy when frozen, resulting in a loss of texture and flavor. Store the soup in an airtight container in the refrigerator for up to 3 to 4 days.
If you’ve tried the creamy tomato soup, let us know. We’d love to hear your thoughts. We hope you enjoy this soup as much as our family does!
