Spring Flower Cupcakes
Spring has finally arrived. The birds are chirping, the bees are buzzing and the trees and flowers are blooming. Wouldn’t you know that causes my allergies to act up? My big plans for working outside in my flowers and herbs were derailed by watery eyes, sniffling and sneezing.  If I couldn’t go outside to work on flowers, I decided to stay inside and make my own with these Spring Flower cupcakes.  I made a basic extra vanilla-y (Is that a word? It is now!) cupcake batter and a buttercream frosting then decorated the top with Wonka Nerds Bumpy Jelly Beans.   I used six of the same color jelly beans nestled around one yellow jelly bean in the center. (Side note: These jelly beans are tasty but they are incredibly sweet.)  If you don’t have time to make the recipe from scratch, use a boxed cake mix and prepared frosting.  If you do have time, the taste of these cupcakes is worth the small amount of extra effort it takes.

A delicious vanilla cupcake with a buttercream frosting, decorated to look like spring flowers!
Ingredients
  • For Cupcakes:
  • 3/4 cup (6 ounces)butter, softened
  • 3 eggs
  • 2 1/2 cups (20 ounces) all purpose flour
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1 3/4 cups (14 ounces) granulated sugar
  • 1 tablespoon vanilla
  • 1 1/4 cups (10 ounces) milk
  • Frosting:
  • 1 cup unsalted butter (2 sticks or ½ pound), softened
  • 3 cups (24 ounces) confectioners sugar,
  • ¼ teaspoon table salt
  • 1 tablespoon vanilla extract
  • 4 tablespoons milk
  • Decoration: one package Wonka Nerds Bumpy Jelly Beans
Instructions
  1. Mix butter, eggs and sugar in a large bowl until blended. In a separate bowl, mix flour, salt and baking powder. Alternate mixing the flour mixture and the milk with the butter mixture. Stirring after each addition until well blended. Add vanilla. Pour into 24 cupcake liners and bake in a 350 degree over for 20 or 25 minutes (until a knife stuck in the middle of the cupcake comes out clean.) Allow cupcakes to cool before frosting.
  2. To make frosting: Mix butter, salt, confectioners sugar and vanilla extract into bowl. Add milk and blend well. Spread on cooled cupcakes.
  3. For decoration: on each frosted cupcake place a yellow jelly bean in the center. Surround the jelly bean with six other jellybeans of the same color to form a flower.
