Spring Smoothies recipe

I admit it freely. I am not a morning person. I don’t roll out of bed cheerfully in the morning, humming my favorite tunes, while preparing a lavish breakfast for the kids. Instead, I can be found downing caffeine and attempting to make the easiest breakfast possible before starting our day. The kids took after me and prefer simple breakfasts too. One of my favorite foods for breakfast is either smoothies or Breakfast Burritos (provided I don’t have to get up early to make them), so when I picked up a 12 pack bag of El Monterey Egg and Bacon Breakfast Burritos, ready to eat in 90 seconds, woohoo!, I knew what we would be having; Burritos and Smoothies. I prepared this amazing spring smoothie recipe that takes only minutes to make and, even better, the prep can be done the night before. Anything that makes my mornings easier are A-Ok with me.

And here is our Spring Smoothie, which met even the pickiest kid’s taste test. Want to make it for yourself? I’ve included the recipe below.

Spring Smoothies recipe and El Monterey: #Momwins!
Ingredients
  • 12 ounces frozen strawberries, bananas and mangoes, chopped
  • 12 ounces vanilla yogurt
  • 1 container (12 ounces) frozen apple juice
Instructions
  1. Mix all ingredients together in a blender until smooth.

I enjoyed the Breakfast Burritos straight from the microwave, but the addition of some mild taco sauce made them even better. My kids have a sneaky way of getting me to cook for them. They claim they can’t prepare the food themselves because I “make it with love.” These breakfast burritos served only with our simple spring smoothies, is easy enough to fit into any hectic morning. Plus, I can still say it is “made with love.” It’s a total #MomWins moment!
