Strawberry Cheesecake Cordial Cups

Do you ever have a day when you really, really crave a bite of something sweet, but don’t want to blow your diet? Or, maybe you’re like me, a little on the lazy side. You want an impressive looking dessert, but don’t want to spend a lot of time putting it together. You are in luck! My three ingredient Strawberry Cheesecake Cordial Cups are so easy to make, take three ingredients and, as a bonus, are gluten free. They’re versatile too. You can substitute dark or milk chocolate for the cups, use any flavor of yogurt and mix it up with the fruit of your choice. The possibilities are only limited by your imagination! (I’ve always wanted to say that about a recipe.) So, without further ado, let’s get to the good stuff.
Strawberry Cheesecake Cordial Cups

To make 8 cordial cups, I used 4 ounces of white chocolate, 1 (5.3 ounce) container of yogurt and 3 strawberries. I used a Wilton cordial candy mold (you can find them at any craft store), but if you would rather make personal sized desserts, use a muffin tin.  Warning: Be sure to line the muffin tins with cupcake wrappers that can easily be pulled out and removed from the chocolate bowl.  I tried this once. Even with spraying the cups with nonstick cooking spray, the chocolate refused to be removed. I spent a long time scrapping with a knife trying to remove the chocolate and even broke the knife tip, not one of my finer kitchen moments!  Ingredients for chocolate cordials
Allow the chocolate to harden, approximately ten minutes in the freezer, and remove the cordial cups. I filled mine with the whipped Strawberry Cheesecake because I liked the light and fluffy look. (I used Yoplait Greek 100 Whips, which are low calorie and pretty, but any type of yogurt will work.)  Once I spooned in the yogurt, I added a slice of strawberry to each cup.

They turned out to be a hit with the entire family, even the kid who doesn’t like strawberries. I considered that I win, especially after all the kids looked at them skeptically when I made them.
