Strawberry Banana Pops Recipe

Can you believe it’s that time of the year already? Yep, it’s back to school! The kids in the area are gearing up for their first week of classes, and that means it’s time to start preparing yummy after school snacks. It’s still hot in Georgia, so the kids are ready for ice cream and cool treats. I decided to make things a little healthier with these three ingredient popsicles. They’re made with fruit and honey, so they are vegan, gluten free and allergy friendly. Plus, it doesn’t hurt that they happen to taste yummy too! The lovely layered look is easy to accomplish and I can feel good knowing the kids have a healthy treat. If they happen to think it’s delicious and unhealthy, I’m not going to try to change their minds!

All you need to make the popsicles is strawberries, bananas, honey, plastic cups and popsicle sticks. (Or, if you own popsicle molds, use those.)  Crush the strawberries and the bananas in separate bowls and add honey to each. It’s easier to crush them in the blender to save time.  Pour the strawberry mixture into the bottom of the plastic cups and allow to freeze until  firm, but not frozen.  This should take about 45 minutes.  Pour  the banana mixture  onto the strawberry mixture. By allowing the strawberry mixture to firm first, you’ll be able to have two toned popsicles.  Add the popsicle sticks into the strawberry/banana mixture. Freeze until firm and remove the cups.

Strawberry Banana Pops
Ingredients
  • 1 pound strawberries, chopped and hulled
  • 3 bananas, peeled and chopped
  • 1/2 cup honey
  • 8 (4 ounces each) cups
  • Popsicle sticks
Instructions
  1. Mash strawberries and add 1/4 cup honey. Mash bananas and add honey. Fill the cups half full of strawberry mixture. Place in freezer for 45 minutes or until firm. Add popsicle sticks. Top with banana mixture and freeze until firm. Remove the cups.
