Summer in the South means sweltering temperatures, high humidity and trying to find ways to keep our cool.  One of the best ways is with a cool, refreshing drink.  This two layer smoothie is so pretty you’ll want to serve it to family and friends. The kids will love the tangy, tart flavor and not realize they are getting something that’s good for them in the bargain.  Because it is two layers, make sure to put the mango layer on the bottom and the strawberry layer on top. Or if you put the mango layer on top, like I did, it will mix to create a cute swirled look.

I adapted this smoothie from a recipe I found at Smoothie web. It is so pretty with the two layers.
Ingredients
  • 2 Fruttare mango pops
  • ½ cup orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 3 ice cubes
  • Top Layer:
  • 2 Fruttare Banana and Milk pops
  • 10 strawberries, cut in half
  • 1 tablespoon lemon juice
  • 3 ice cubes
  • 2 strawberries for garnish
Instructions
  1. To make the Bottom layer:
  2. Add the mango Fruttare, orange juice, lemon juice, honey, and ice cubes to a blender and puree until smooth. and divide between two 8 oz. glasses. Store in fridge or freezer until top layer is completed.
  3. To make the Top layer:
  4. Rinse the blender, then add banana Fruttare, strawberries, lemon juice, and ice cubes. Puree until smooth. Gently pour into glasses and try to maintain a line separating the layers.

I made our smoothie with  new Fruttare bars, for which I received a product coupon to be able to test them for myself. They are available in four flavors, Strawberry, Lime, Mango and Orange, plus four fruit and milk bars, peaches and milk, strawberry and milk, bananas and milk and Coconut and milk.  Think of all the possibilities for different drinks that could be created with these pops. Feel free to substitute flavors to suit your tastes. Of course, according to my picky kids, the bars are good straight from the freezer without being mixed into anything.  I live the lower number of calories in these pops too–the Mango pops have only 60 calories each, making them a guilt free pleasure on a hot summer day.
