Thai Chicken with Basil and Coconut Milk Recipe

We have always been “adventurous” eaters at our house. We spend a lot of time encouraging the kids to try new food and see if they like it.  Since my daughter has been diagnosed with celiac disease, we have had to become creative in our cooking.  I have found that many Thai inspired dishes do not use foods containing gluten so our repertoire has expanded, once again, to include more Thai inspired dishes. I found this recipe on Food.com and changed a few ingredients to produce a rich chicken dish served with tasty noodles. Use more of less hot sauce to adjust for tastes.

Thai Chicken with Basil and Coconut Milk #recipe (gluten free)

A gluten free Thai inspired entree. You can adjust the amount of chili sauce for tastes. This amount adds a milder amount of heat.
Ingredients
  • 1 lb boneless skinless chicken breast (or 2 lbs. leg quarters, boiled and removed from bone)
  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 2 tablespoons chili sauce
  • 1 cup fresh basil, finely shredded (or 1-2 tbsp dried basil)
  • 2 tablespoons fish sauce
  • 1/8 cup chopped cilantro leaves
  • 1 can (13 ounces) coconut milk
  • Coconut Noodles:
  • 1 can (13 ounces) coconut milk
  • 1 package ( 8 ounce) Brown Noodles
Instructions
  1. Heat oil in wok or deep pan. Cook onions until soft; add chicken and stir fry until tender.
  2. Add basil, fish sauce and cilantro. Stir thoroughly. Add coconut milk and simmer for ten minutes.
  3. To Make Noodles:
  4. Boil noodles in coconut milk until tender. Around ten minutes. Serve with chicken mixture. Garnish with cilantro if desired.
