Coming from a large extended family we had family reunions often during the summer. They were huge affairs with fifty to one hundred people. The adults sat around on the front porch and talked while the kids ran around the yard, enjoying the sunshine. Food was left on the table all afternoon so if we ever had a hungry spot we could grab a plate and fill it with goodies. These days we have cookouts during the summer on a much smaller scale but I still use the recipes from my childhood. My aunt always brought a huge pot of these baked beans for any cookout or family reunion. They are simple to prepare but people will think you fussed which is always a plus in my book. I would certainly not tell them differently!
- 1/2 cup ketchup
- 1 lb hamburger meat
- 3/4 cup chopped bell pepper, I use red, green and yellow peppers for color
- 3/4 cup chopped onion
- 1 can (20 ounces) baked beans
- salt and pepper to taste
- 2 tablespoons vinegar
- 2 tablespoons sugar
- Brown ground beef, onion and bell pepper in a large skillet. Drain fat. Mix baked beans, ketchup, vinegar, sugar and salt and pepper together in a large casserole dish. I usually use a 9” by 13” pan. Add ground beef mixture. Stir well and bake at 350 degrees for 30 minutes. Serve warm.

The Southern beans make me feel warm and well-fed (even if I am just looking at them on the computer screen!). Though, that would be good for dieting… Seriously, it looks yummy.
