One of our favorites is this smooth, creamy easy guacamole recipe. It’s naturally gluten free for the Celiacs in the family and tastes delicious as a side dish to so many recipes. Try it and you’ll see why we think it is the best guacamole recipe ever!
Guacamole Ingredients
2 avocados, peeled and seed pit removed
1/2 medium sized onion, diced
1/2 bunch Cilantro, diced (use about 1/2 cup)
Salt to taste (We use about 1/2 teaspoon)
Juice of 1 lime, use freshly squeezed juice (about 1/4 cup)
Directions
Break the avocado into pieces and place in a bowl. Dice the onion and cilantro. Add the onion and cilantro into the bowl with the avocado. Mash the avocado, onion and cilantro mixture with a fork until it reaches the desired consistency. Tip: You’ll want it to be a little lumpy, especially if you are using it as an avocado dip with nacho chips. Add the salt and lime juice. Stir until blended. You’ll want to serve the guacamole dip quickly, as the avocado tends to turn a brown color, making it look unappetizing, although still safe to eat. Store the dip in the fridge, tightly covered.
