Delicious Holiday Toffee Almond Fudge Recipe

Christmas has always been one of my favorite holidays. It’s the one time of year I can feel good about making all my favorite sweet treats. My friends and family are happy when Christmas rolls around too. I make way too much just enough candy and treats and share them with everyone. I’ve always been a fan of those luscious chocolate treats but when I got married I discovered Bryan was allergic to chocolate. Is this not a horrible allergy? I wanted something he could eat too and found a recipe for Vanilla Fudge with almonds. I adapted it to give it my own special twist with the addition of toffee. Thus, my Toffee Almond Fudge Recipe was born. Not only does it taste great, it’s also naturally gluten-free. That means the people in the family who claim gluten-free foods all taste bad will not know it’s gluten-free unless you tell them.

Toffee Almond Fudge Recipe

The beauty of this recipe is that it can be whipped up in minutes so it’s perfect for those days when the kids say, “Um, Mom, I forgot to tell you but I need a treat for (fill in the blank).” Note: It does need chilling time, but the hands-on prep time is minimal.  It’s adaptable too. Don’t like almonds? Substitute a different nut or leave them out. You can add candies (like M&Ms) or make the fudge without the add-ins. If you don’t have any chocolate allergies, you can use milk or dark chocolate. Hint: To make the flavor really pop in this recipe, be sure to toast the almonds or purchase toasted salted almonds. That’s my secret to quick and easy.

Toffee Almond Fudge Recipe

A rich, sweet fudge chock full of toffee and almonds. You can vary the recipe by trying other nuts or add-ins or just have plain vanilla fudge. It’s also gluten free so the entire family, including celiacs, can enjoy it!
Ingredients
  • 1 (16 ounces) package white baking chocolate
  • 1 (8 ounces) package cream cheese, softened
  • 1 cup toasted, chopped almonds (Adjust the amount of nuts to suit your taste. You can add more if you like)
  • 1 tablespoon vanilla OR almond flavoring
  • 3 cups (24 ounces) powdered sugar
  • 1 1/2 cups (12 ounces or one package) toffee chips -purchase the toffee chips with or without chocolate
Instructions
  1. Spread the almonds on a baking sheet and place in an oven for five minutes or until lightly browned if not using pre-toasted almonds. Meanwhile, in a microwave-safe bowl, melt white chocolate for 1 minute. Stir, and microwave again for 30 seconds to 1 minute or until chocolate is melted. Stir until smooth. Place chocolate and cream cheese in large mixing bowl and mix until blended. Add vanilla, mix. Add powdered sugar slowly ( 1 cup at a time) and blend until mixed. Add vanilla and 1 cup (8 ounces) of the toffee chips. Stir until combined. Spread in an 8″ by 11″ pan and top with 4 ounces of toffee chips. Place the fudge in the freezer until firm (1 to 2 hours) and then cut into one-inch pieces.
