I’ve recently rediscovered the “crumb cakes” from my childhood. They’re so easy to make, with a ten minute or less prep time and five ingredients or less. They’re the classic comfort food. This nutty peach crumb cake recipe can be made gluten free or in a “regular” version with a simple substitution. I adapted a basic recipe and added almonds and flavoring to give it an extra “oomph”, but it can be made without nuts if you prefer. It’s delicious served with a scoop of vanilla ice cream or whipped cream.
Peach Crumb Cake Recipe:
I prefer my cake to have less crumb topping, so I suggest using 1/2 of a boxed cake mix. You can easily mix up the entire box of cake mix if you want and freeze half for later to use as topping on another day.
Ingredients:
peach pie filling
gluten free (or regular) white or yellow cake mix
butter (don’t use margarine. It doesn’t taste as good!)
almond extract
roasted almonds, chopped
Directions:
Step 1: Spread peach pie filling evenly across the bottom of a 9″ by 9″ pan. (I spray my pan with cooking spray first for easy clean up.
Step 2: Mix cake mix, butter and almond extract together in a large bowl until crumbs form.
Step 3: Spread crumbs evenly across the top of the peach pie filling.
Step 4: Top with chopped roasted almonds>
Step 5: Bake for 20 to 25 minutes at 350 degrees or until topping is no longer doughy.

- Step 5: Bake for 20 to 25 minutes at 350 degrees or until topping is no longer doughy.
