Chocolate Peanut Butter Cream Bars Recipe

With the extra time I have on my hands now, I’ve been scouring through my bookcase filled with cookbooks.  Whenever I find a recipe that sounds delicious, I make a batch to send to my husband’s coworkers.  This Chocolate Peanut Butter Cream Bars recipe that I found in Almost Homemade Cake Mix Desserts was a hit with all of them. What they didn’t realize was the recipe only has seven ingredients and is a breeze to make.

Chocolate Peanut Butter Cream Bars

Imagine a rich chocolate layer, topped with a fluffy peanut butter filling, and sprinkled with more chocolate. Sound good? Of course. But, is it really easy?  We’ve all read those “easy recipes” that require finding exactly one eye of newt, a dash of garam masala,  and two pigs teeth that must be buried in the backyard for 24 hours before using.  This is not that recipe.

The secret to this luscious semi-homemade dessert is its base of a box of devil’s food cake mix.  While prep time is minimal, these bars have to chill for an hour before being served.  In other words, it’s okay to make them a day in advance and store them in the fridge.

Chocolate Peanut Butter Cream Bars Recipe
Recipe Type: dessert
A delicious cookie bar with a rich, creamy peanut butter filling. With only seven ingredients, this dessert is a snap to put together. Make it gluten-free by substituting gluten-free cake mix for the regular cake mix.
Ingredients
  • Crust:
  • 1 (15.25 ounces) box Devil’s Food Cake Mix
  • 1/3 cup corn oil
  • 1 egg
  • Filling
  • 1/2 cup sugar
  • 34 cup creamy peanut butter
  • 8 ounces cream cheese, softened
  • 1 egg
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix together the cake mix, corn oil, and egg until blended. Reserve 1 cup of the cake mixture.
  3. Spray a 9″ by 13″ pan with cookie spray. Press the remaining mixture into the pan and bake for 10 minutes.
  4. In another large bowl, mix the sugar, peanut butter, cream cheese, and egg together until blended. Stir in the vanilla extract.
  5. Spread the peanut butter mixture evenly over the chocolate layer.
  6. Sprinkle the reserved chocolate mixture over the peanut butter mixture.
  7. Bake for 20 more mixtures.
  8. Allow the pan to cool completely and then chill the bars in the fridge for one hour before serving.

Cooking Tips:

*Need it to be gluten-free? Substitute a box of gluten-free devil’s food cake mix for the regular cake mix.
*Want it to have an extra punch of peanut butter flavor? Increase the peanut butter used in the recipe to 1 cup.

If you’re looking for a copy of the cookbook,  I believe it is out of print.  It was published in 2004 by Favorite Recipes Press. I’ve seen copies floating around eBay for less than $5.00.
