Sometimes you just need dessert in a hurry. That’s where this easy Lemon Icebox Pie recipe comes in. With just four ingredients and five minutes, this no-bake pie is ready to go. My mother-in-law gave me the recipe for this pie years ago when my kids decided they loved it. I told the kids I didn’t think this pie had ever seen a lemon and gave it a small adjustment; more lemon juice.
Easy Lemon Icebox Pie Recipe
The great thing about this pie is the ingredients can be stored in the pantry, refrigerator, or freezer. All you need is a can of sweetened condensed milk, a container of frozen whipped topping, a pre-purchased graham cracker pie crust, and some lemon juice. Yep, that’s it. And, yes, I know, this pie is high calorie. That’s why it’s an occasional treat. We usually have this pie on Memorial Day, the 4th of July, and Labor Day.

- 1 can (14-ounce) sweetened condensed milk
- 1 (8-ounce) container whipped topping (like Cool Whip)
- 1 cup lemon juice
- 1 (9-inch) prepared graham cracker pie crust
- In a large bowl, add sweetened condensed milk and whipped topping. Stir until blended.
- Add lemon juice. Stir until completely blended. Pour into prepared graham cracker pie crust.
- Place in the freezer 30 minutes to an hour before serving.
- Store in the refrigerator for up to five days.
Recipe Tips
*To make a gluten-free version of this pie, simply use a gluten-free pie crust. Or, serve this as a mousse with gluten-free lemon cookies.
*To make the whipped topping easier to mix, microwave for ten seconds before adding to the mixture.
*While it’s not required, if you put the pie into the freezer for 30 minutes to an hour before serving, it will become firm and easier to cut.
*Store the pie in the refrigerator for up to four days or in the freezer for up to a month. To freeze, wrap it tightly in aluminum foil before placing it in the freezer.
*Vary the amount of lemon juice to give it more flavor or add 1/2 cup lemonade concentrate. I do this sometimes and it gives the pie a delicious tart flavor.
*You can substitute fresh lemon juice for the bottled lemon juice if you wish. Each large fresh lemon will yield about 1/4 cup juice.
