Chicken is my favorite protein. We’ve had a ton of chicken dishes over the years. I can always tell when we’ve had to much chicken in our menu plan. Once, when I asked Bryan what he wanted me to do with the chicken, he mumbled, “Throw it in the trash.” I’m not sure what I did with the chicken that day, but I know it was not thrown in the trash. I’m also a fan of “spur of the moment dishes” using ingredients from my fridge or pantry. In other words, I’ll experiment with what I have on hand to keep from running to the store. One of my concoctions turned out to be this Lemon Cream Sauce Chicken Recipe. Not only is it easy to make, it only has six ingredients, plus salt and pepper.
Lemon Cream Sauce Chicken Recipe
This recipe is naturally gluten-free so it’s perfect to serve to guests with Celiac disease or gluten intolerance. You can adjust the amount of lemon in the dish to suit individual tastes. I like mine with a strong hint of lemon, which my son always declares as “too lemony.” I’ve added the less “lemony” amount in this recipe and then the “lots of lemon flavor” amount. If you want tons of lemon flavor, add a sliced lemon into the pan when the mixture is cooking. If not, just leave the fresh lemon out.
I created this recipe when I was newly married (and we won’t talk about how many years ago that has been!) I’m made this on numerous occasions for guests and for my family and always had compliments. And, believe me, my children are not shy about telling me if they don’t like something I have made. Not only does it taste good, it doesn’t have much hands-on prep time, meaning you can be in and out of the kitchen in a flash.

- 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1 (8 ounces) container sliced fresh mushrooms
- 1 cup heavy cream
- 1 cup lemon juice sliced lemon, optional
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- In a large saucepan over medium high heat, melt the butter.
- Add the garlic and mushrooms. Saute for 3 minutes, stirring often.
- In a small bowl, mix the lemon juice, salt, and pepper.
- Add the chicken to the saucepan along with the lemon juice mixture. Add sliced lemon, if using.
- Reduce heat to medium-low, cover, and simmer for twenty minutes, turning chicken occasionally.
- Add the cream, cover and simmer for ten to fifteen more minutes, turning chicken occasionally.
Cooking Tips
*This chicken is good served over rice or noodles as the sauce makes a tasty mix-in with the rice or noodles.
*If you like a thinner sauce, add more lemon juice and more cream.
*If you prefer a thicker sauce, mix 1 tablespoon cornstarch into the cream mixture. Make sure it is dissolved completely before adding the cream mixture to the chicken.
*For a different flavor, substitute an equal amount of lime juice or orange juice for the lemon juice.
