Summer is the perfect season to sit in the shade and sip a cool drink. Admittedly, I don’t get to do that often. Usually, it has to be when I am on vacation. This summer, while we were exploring St. Louis and the surrounding area, we stepped into a cute candy shop that served homemade drinks. While I forgot the name of the drink, watching her make it seemed simple enough. My first thought was, “Hey, I could make this at home and pretend to relax!” Naturally, I changed the ingredients a little and came up with a simple drink that can be made in minutes and has only 3 ingredients. (Four if you want to get fancy.) This Sparkling Mermaid Lemonade would be perfect for a Little Mermaid Birthday Party or any type of Under the Sea themed party. You could change the name and make it “Ocean Water” for a Pirate themed party too!
Sparkling Mermaid Lemonade Recipe:
Chill the ingredients before using and you won’t need ice! You could also freeze lemonade in ice trays to add to the drink. This would keep it from being watered down as the ice melts. This could also be frozen until it is a slushy consistency and be used as slushies. Or make adorable popsicles by placing a Swedish Fish in a popsicle mold and adding the drink. Freeze and serve.
- 1 (2 liters) Lemon-Lime soda, chilled
- 1 (12 ounces) container frozen lemonade concentrate
- 1 (2 ounces) package Swedish Fish
- blue food colorings
- Mix lemon lime soda and frozen lemonade concentrate until well blended. Add approximately 10 drops of blue food coloring (use more or less depending on the color you desire) and blend. Add a Swedish Fish to the bottom of each glass before adding the lemonade mixture.
Tip: If you don’t want the Swedish Fish to sink to the bottom of the glass, use a summer of spring cocktail pick to spear the fish and add it to the top of the drink.
