I have a bookshelf entirely full of cookbooks, most of which I’ve skimmed through over the years, but never dug into. I’m a big believer in preparing easy recipes-and also that desserts are the spice of life- so most of my cookbooks consist of either easy recipes, desserts, or both. With extra time on my hands lately, I decided to look through my cookbooks to find new recipes for the family.
While browsing through Taste of Home’s Ultimate 5 Minute Recipes, I came across Marshmallow Fudge. After reading the ingredients, I decided to make it, rename it my “S’mores Fudge Recipe” and serve it to my husband’s co-workers. I knew I had a hit on my hands when one co-worker tasted it and said, “We need to pray over this fudge because it tastes so good it’s sinful.”
S’mores Fudge Recipe
This no-bake recipe takes around ten minutes of prep time since it can be made in the microwave. If you want a gluten-free version, substitute gluten-free graham crackers for the regular graham crackers. Feel free to substitute semi-sweet chocolate chips or dark chocolate chips instead of the milk chocolate.
Printable Recipe:
- 1 package (12 ounces) milk chocolate chips
- 1 can (14 ounces) sweetened condensed milk
- 1 teaspoon vanilla
- 2 cups mini marshmallows
- 8 graham crackers, crushed
- In a microwave-safe bowl, add the chocolate chips and sweetened condensed milk. Microwave for 1 minute. Stir. If the mixture is not melted, return to the microwave for another minute, stirring after every 30 seconds.
- Stir in vanilla flavoring.
- Add in marshmallows and graham crackers. Stir until blended.
- Line a 9″ by 9″ baking dish with aluminum foil, wax paper or parchment paper. Spray paper with cooking spray.
- Pour fudge mixture into the prepared pan.
- Chill one hour or until firm. Cut into pieces.
S’more Fudge Recipe Variations:
*S’mores Pecan Fudge: Add 1/2 cup of toasted chopped pecans (or walnuts) to the fudge.
*S’mores Peanut Butter Fudge: Add 1/2 cup crumbled Reese’s Peanut Butter cups to the fudge.
About the Book:
Taste of Home’s Ultimate 5 Ingredient Recipes was published in 2009 and contains 398 recipes that use five ingredients or fewer. The book is divided into eleven chapters covering snacks & beverages, salads and dressings, soups and sandwiches, beef and pork entrees, poultry main dishes, seafood and meatless suppers, side dishes and more, breads, biscuits, and baked goods, cookies, bars, and candy, cakes and pies, and delightful desserts.
Although I believe the book is out of print, you can often find copies in used bookstores. It is a good reference for beginning cooks as all of the recipes are simple and contain easy-to-find ingredients, and also for anyone who needs to get dinner on the table in a hurry. And, isn’t that all of us sometimes?
